Derry City and Strabane District Council (DCSDC) is seeking tenders from sufficiently experienced and qualified companies or individuals to operate a sustainable café concession within the Guildhall, in the heart of the city. In keeping with Council’s requirement to create a sustainable, quality café that matches the surroundings and expectations of residents and visitors alike, the successful operator would be required to provide (at their own cost) equipment that is capable of delivering a sustainable quality service and experience. DCSDC envisages a 7-day operation with opening hours during weekdays (Mon-Fri) being at least 8am to 6pm and weekends / public holidays from 9am to 6pm. It is essential for tenderers to be able to demonstrate that they can fulfil the core opening hours as outlined above and facilities should be prepared and ready prior to opening time to ensure a seamless service. It is desirable for tenderers to outline if they can demonstrate the ability to operate beyond the core times to service peak seasonal periods and events.
